How to Make Avocado Ice Candy

Back home in the Philippines one of my favorite treats is Avocado Ice Candy. So, when I came back from my trip back home about a year ago, I brought back some ice candy or popsicle wrappers with me. I thought of making ice candy when I get back here in the US. It is the perfect time to make some as summer is extra hot this year. I used real avocado as this is my favorite ice candy flavor. It reminds me of when I used to watch my mother make them. I eventually learn how to wrap one by observation. Please join me in learning how to make this Filipino frozen treat!


Avocado Ice Candy Recipe - How to Make Avocado Ice Candy

Ingredients

  • 1½”x10″ or 2″x10″ ice candy (popsicle or ice pop)
  • 1 pc medium-sized funnel (for filling the tube with the liquid mixture)
  • 3 pcs medium-sized ripe avocado, mashed (use any fruit or flavor to your liking)
  • 3 cups room temperature water (to boil with the corn flour)
  • 2 tbsp corn flour (cornstarch)
  • 1/3-1/2 cup sugar (white or brown)
  • 1 cup fresh milk (non-fat, 2% reduced-fat or whole milk is fine)
  • 1/3-1/2 cup sweetened condensed milk
  • 1 cup room temperature water (to adjust the sweetness but this is optional)

Instructions

Dissolve the Corn Flour:

In a saucepan, put water and add corn flour (cornstarch). Mix well until corn flour is completely dissolved. Bring to a boil over medium-high heat for 5-10 minutes. When the liquid becomes silky and smooth remove it from heat, let it cool for 15-30 minutes.

Prep the Avocado:

Meanwhile, prepare the mashed avocado (you can use any fruits or flavor to your liking). Cut the avocado in half and remove the seed (tips in removing the seed, gently strike the seed with the knife, twist left to right, and lift to remove it). Using a spoon scoop the meat and place it in a small bowl. Carefully mash the avocado meat using a fork. Set aside for later use.

Mix the Ingredients:

In a large bowl, put the sugar and slowly pour the corn flour mixture. Mix well until sugar is completely dissolved. Add fresh milk, sweetened condensed milk, and water (I added 1 cup of water to adjust the sweetness but it is completely optional to your liking). Mix to combine. Slowly add and mix the mashed avocado with the liquid mixture. Using a blender, gently pour and lightly puree (puree is a personal preference, use different settings/textures if desired) the mixture at low speed. Pour the pureed mixture into a large bowl. Repeat the process until you finish the entire mixture.

Pour in wrapper and freeze:

To wrap using a 2×10 and/or 1½x10 wrapper scoop about ½ cup of the avocado mixture and fill the bag using a funnel. Release any air and firmly press and hold the remaining plastic wrapper. Gently twist for 5-8 times or until you feel the plastic is tight. Tie firmly by spinning it around your hands as you feed the remaining plastic through the hole while you push the knot downwards and pull the end in the opposite direction. Repeat the process until the entire mixture is consumed. Freeze for 24 hours or until firm.
